I made a stewed pumpkin using sweet sake instead of sugar. The sweetness of the sweet sake is not too strong and goes perfectly with the fluffy texture of the pumpkin.

Kojiya Sanzaemon's Amazake Junmai

soy sauce
1 tablespoon
Liquor
1 tablespoon
sweet sake
1 tablespoon
1. Remove the seeds from the pumpkin, microwave for 3 minutes at 500W, and cut the pumpkin into bite-sized pieces. (Be careful as the pumpkin will be hot.)
2. Put the pumpkin, all the seasonings, amazake, and water in a deep pot, cover with a lid, and simmer over medium heat. (If you don't have a lid, cover the pumpkin with aluminum foil and simmer.)
3. Once boiling, reduce heat to low and simmer until pumpkin is tender. Be careful not to burn it.
4. Arrange on top and it's done!
It's also delicious when eaten chilled.
