As a general rule, we cannot accept cancellations due to customer convenience.

  • Does Amazake contain alcohol?

    Contains no alcohol.

It is safe for drivers, children, and pregnant women to consume.

  • Can I use the koji I made as starter koji to make more koji?

When you make koji at home, a certain amount of bacteria will be mixed in. Using that as starter koji to make more koji will lead to culturing bacteria, so you should never do this.

Kojiya Sanzaemon's starter koji is manufactured after thorough quality inspections, so you can use it with confidence. However, if the tools and hands used are not clean, bacteria will grow. Please thoroughly sterilize your tools and hands with about 70% alcohol before making koji.

  • Is seed koji genetically modified?

No genetically modified ingredients are used.

  • Can I make koji using rice cooked in a rice cooker?

When making koji, be sure to use steamed rice.

If you sprinkle koji seeds on cooked rice, the rice will contain too much moisture and the koji will not form. It can also lead to spoilage.

  • The koji doesn't form into a slab...

Koji forms into a sheet when the hyphae of the koji mold grow and intertwine, forming a clump and sheet. The hyphae are cut by loosening the rice while the koji mold is growing, so depending on the number of times and timing of the growth, the hyphae may not fully grow and may not form a sheet. If the product does not form into a sheet, it does not mean it has failed. If there is nothing abnormal in the appearance or smell, it is ready to use.

  • Please tell me how to preserve the koji you made.

Spread the finished koji thinly and allow it to cool to room temperature. Once it has cooled to room temperature, place it in a clean bag or container and store it in the freezer. When defrosting, allow it to thaw naturally.

  • Can rice koji be made from brown rice?

Brown rice has a hard skin, so it does not absorb water easily and koji mold does not grow easily.

We recommend polishing the rice for 2-3 minutes before making koji, rather than using brown rice as is.

  • Is it possible to ship the products to overseas?

Tane koji(koji spores) can be shipped overseas. However, we do not currently ship other products overseas.

  • Is the shipping cost the same for all products shipped overseas?

It depends on the quantity of products and country. Please confirm the cart screen.

If you order less than 2000JPY, it costs 500JPY for document preparation fee.

  • I'm considering purchasing a product for my company or in large quantities.
