The citric acid in the black koji mold makes the chicken breast moist. No frying pan is required. This is a hearty dish that can be easily made in the microwave. The granular texture and sour taste of the black koji mold will whet your appetite. You can eat it as is, or break it up and eat it with vegetables. It goes well with any ingredients.

1. Remove the skin from the chicken breasts and cut open the thick parts with a knife to a thickness of about 1cm.
2. Sprinkle black koji evenly over 1 and leave for 20 minutes. (If the black koji is crumbly and difficult to coat, you can use more than the recommended amount.)
3. Lightly shake off the black koji and rub the chicken on both sides with the ingredients from step 2 in the following order: salt, sugar, and pepper.
4. Put 3 into a heat-resistant bowl along with the used black koji, then pour the sake and sesame oil on top.
5. Cover 4 loosely with plastic wrap and microwave at 600W for 4 minutes.
6. Once heating is complete, leave it in the microwave for 10 minutes.
7. Remove the chicken and lightly cut a slit in the center. If the inside is still red, cover with plastic wrap and microwave for an additional 2 minutes.
8. Once hot, slice and plate. There will be some sauce remaining at the bottom of the heat-resistant container, so pour that over the chicken salad as well.
