We at Kojiya Sanzaemon have been involved with koji and honed our techniques for 600 years as a koji starter manufacturer founded in the Muromachi period. Through our long history of working with koji mold, we have come to realize the various possibilities of koji.
This website offers many items that were created in our pursuit of the possibilities of koji, including koji starter, which allows you to experience making koji, and amazake, which allows you to enjoy the taste of koji.
It is our hope that through these items, our customers will be able to experience the joy and richness that having koji in their daily lives brings, and that they will be able to discover the potential of koji for themselves.
As a public institution, we will continue to evolve in a way that combines old and new to contribute to the development of Japan's proud food culture, which is based on koji.

Simple chronology

Muromachi Period
Founded in Kyoto, the company was granted permission by the 13th Ashikaga Shogun.
Edo Period
It is said that we were the only other company that distributed koji seeds from the river to the Nada Sea and was engaged in the koji seed business.
Late Meiji Period
Many other start-of-seasoning koji manufacturers emerge. Our company begins producing start-of-seasoning koji for soy sauce.
1952 (Showa 27)
The company is recognized by the Kyoto Chamber of Commerce and Industry as the oldest established company in the prefecture's industrial sector.
1965 (Showa 40)
Toyozo Murai, the third son of the Kyoto head family, becomes independent and establishes his base in Toyohashi City, Aichi Prefecture.
1970 (Showa 45)
Following the closure of the main branch in Kyoto, Toyozo Murai took over the business and became the 27th head of the family.
1992 (Heisei 2)
Bioc Co., Ltd. is established as a research and development company.
1993 (Heisei 3)
Soichiro Murai became the 28th head of the family.
2003 (Heisei 13)
The company expanded as Bioc Co., Ltd., and the current company building and factory were completed at the current location.
2016 (Heisei 28)
Yuichiro Murai becomes the 29th head of the family.
2017
"Kojiya Sanzaemon's Amazake" is presented to the Papal Embassy
2021 (Reiwa 03)
In order to expand our consumer-oriented business, we have renovated and reopened our e-commerce website.
2022 (Reiwa 04)
Amazake will be used and served at the LOEWE x Ghibli "Spirited Away" event.
