As a seed koji manufacturer founded in the Muromachi period, we at Kojiya Sanzaemon have been involved with koji for 600 years, refining our techniques. Through this long history of working with koji molds, we have come to feel the various possibilities of koji.
This site offers many items that have emerged from our pursuit of koji's potential, such as seed koji for experiencing koji-making and amazake for enjoying the taste of koji.
Our wish is that through these items, you will experience the joy and richness that having koji in your daily life brings, and that you will discover the possibilities of koji for yourself.
We will continue to be a public instrument of society, fostering both ancient and new, certain evolution, to contribute to the development of food culture centered on Japan's proud koji.
Sanzaemon Murai, 29th Generation
Brief Chronology
Muromachi Period
Founded in Kyoto; received a license from the 13th Ashikaga Shogun.
Edo Period
Distributed seed koji from Mikawa to Nada; it is said that only one other company besides ours conducted the seed koji business.
Late Meiji Period
Many other seed koji businesses emerged. Our company began manufacturing seed koji for soy sauce.
1952 (Showa 27)
Awarded by the Kyoto Chamber of Commerce and Industry as the oldest long-established business in the industrial sector of the prefecture.
1965 (Showa 40)
Toyozo Murai, the third son of the Kyoto main family, became independent and established his base of operations in Toyohashi City, Aichi Prefecture.
1970 (Showa 45)
With the closure of the Kyoto main family, Toyozo Murai took over the business and became the 27th head of the family.
1992 (Heisei 02)
Established Bioc Co., Ltd. as a research and development company.
1993 (Heisei 03)
Soichiro Murai assumed the position of 28th head of the family.
2003 (Heisei 13)
Expanded business as Bioc Co., Ltd., and completed the current company building and factory at the present location.
2016 (Heisei 28)
Yuichiro Murai assumed the position of 29th head of the family.
2017 (Heisei 29)
"Kojiya Sanzaemon Amazake" was presented to the Apostolic Nunciature (Vatican Embassy).
2021 (Reiwa 03)
EC site relaunched. KOJI THE Kitchen project began.
2022 (Reiwa 04)
Amazake was adopted and offered at the LOEWE x Studio Ghibli "Spirited Away" event.
2025 (Reiwa 07)
Yuichiro Murai assumes the name Sanzaemon Murai. KOJI THE Kitchen Academy held for the first time overseas (Barcelona, Spain).
