As a seed koji manufacturer founded during the Muromachi period, Kojiya Sanzaemon has been involved with koji for 600 years, refining its techniques. Through our long history with koji mold, we have come to feel the various possibilities that koji offers.
This site offers a wide range of items born from our pursuit of koji's potential, such as seed koji for experiencing koji making and amazake for enjoying the taste of koji.

Product Introduction

 

Amazake and koji seasonings to enrich your daily life. When you want to take care of yourself and take another step forward, they gently accompany your personal time.
We carefully select koji mold that brings out the maximum color, aroma, and flavor. As it is unpasteurized (unheated) and undiluted, it has a rich sweetness that you wouldn't expect from a sugar-free product, just like freshly made amazake. It is sugar-free, non-alcoholic, and made with domestic ingredients. Since it's a concentrated type, it can be used not only as a drink but also as a sugar substitute and in various arrangements. Perfect for a treat for yourself or as a gift.


 

Make your own original koji at home. We sell seed koji, recognized by professionals and used by brewing manufacturers, in sizes adapted for home use. Whether you want to make seasonings like miso and soy sauce from koji, or arrange the koji you've made, the possibilities are endless. We also handle "black koji mold," a first for home use.

 

For those who want to easily use koji, we also offer convenient frozen and dried koji. All of our koji is made with 100% domestic ingredients. Fresh koji is frozen immediately after production to preserve its original flavor. Dried koji is convenient to use; just add water on the day you want to use it. Please choose according to your needs and preferences.

 

 

 

 

Brief Chronology

 

Muromachi Period
Founded in Kyoto, granted a license by the 13th Ashikaga Shogun.
Edo Period
Distributed seed koji from Kawa to Nada; it is said that only one other company besides ours operated a seed koji business.
Late Meiji Period
Many other seed koji businesses emerge. Our company begins manufacturing seed koji for soy sauce.
1952 (Showa 27)
Awarded by the Kyoto Chamber of Commerce and Industry as the oldest established company in the industrial sector of the prefecture.
1965 (Showa 40)
Toyozo Murai, the third son of the Kyoto main family, becomes independent and establishes his base in Toyohashi City, Aichi Prefecture.
1970 (Showa 45)
Following the closure of the Kyoto main family, Toyozo Murai takes over the business as the 27th head.
1992 (Heisei 04)
Establishes Bioc Co., Ltd. as a research and development company.
1993 (Heisei 05)
Soichiro Murai assumes position as 28th head.
2003 (Heisei 13)
Expands business as Bioc Co., Ltd., and completes current head office and factory at the present location.
2016 (Heisei 28)
Yuichiro Murai assumes position as 29th head.
2017 (Heisei 29)
Kojiya Sanzaemon's Amazake is presented to the Embassy of the Holy See.
2021 (Reiwa 03)
EC site relaunched. KOJI THE Kitchen Project begins.
2022 (Reiwa 04)
Amazake adopted and served at the LOEWE x Ghibli "Spirited Away" event.
2024 (Reiwa 06)
"Koji Kentei" (Koji Certification Exam) business begins.
2025 (Reiwa 07)
KOJI THE Kitchen Academy holds its first overseas event (Barcelona).
Yuichiro Murai assumes the name Sanzaemon Murai as head.

kuroban

The license granted by the 13th Ashikaga Shogun during the Muromachi period. As a permit to start the seed koji business, it was stamped on the bags containing seed koji with a woodblock and sold, leading to the company being called "Kuroban" (black stamp), a nickname still beloved by sake breweries nationwide today.
