KOJI THE KITCHEN Academy vol.2 was held over two days, October 8th and 9th.
The venue, like the previous event, will be emCAMPUS FOOD, Hotel Arc Riche Toyohashi.
The guests for Vol.2 were Kana Fujiwara, Vice President of Fujiwara Technoart Inc. and Section Manager Fukano of the Process Development Department. Arc Riche Executive Chef Imazato continued to supervise dinner and also gave a cooking class using koji on the second day.
Participants had the opportunity to learn about koji and starter koji, and experience a wide range of topics over the two-day, one-night program, including applications in the kitchen and in the future.
First, in the general introduction to seed koji class, you will learn about the history and characteristics of koji and koji mold.
Through discussion and hands-on experience with the koji-making process, participants gained a deeper understanding.
For dinner, enjoy a full course meal of koji fermented by the executive chef himself.
On the second day, we will welcome Vice President Fujiwara and Mr. Fukano and receive a lecture on the global development of koji production and efforts for the future.
During the experience of the final koji 45 hours after the start of koji making, everyone seemed especially impressed by how the koji looked very different from when the starter was cut.
The final cooking class was given by Executive Chef Imazato and Head Chef Arakawa, who gave a series of practical recipes with everyone taking serious notes on the recipes.
Vol.2 had a smaller number of participants than the previous session, so there was more active communication with the instructors.
By the end of the two-day program, everyone had become completely comfortable with each other, a synergistic effect had been created among the participants, including the instructors, and a community based around koji seemed to have been formed.
