[Recipe] Black Koji Amazake

When you make amazake with black koji, the citric acid gives it a fruity flavor.

If you chill it and drink it with ice, you can enjoy a tropical amazake that will overturn your previous image of amazake.

【material】

Rice: 1 cup

Water (separate from the water used for cooking rice): 400cc

Black koji: 300g

【How to make】

1. Cook rice in a rice cooker.

2. Add 400cc of water to the cooked rice and mix well.

3. Add black koji to 2 and mix well.

4. Put 3 into the rice cooker.

5. Leave the rice cooker lid open, cover it with a damp cloth, and leave it on keep warm mode for 8-10 hours.

6. Finished!!

It can be used in a variety of ways, such as making a smoothie with fruit or sprinkling it on yogurt.
