Kojiya Sanzaemon's amazake is made using carefully selected rice, water, and even the koji mold used before the rice is made into koji, so that you can enjoy the aroma and flavor of the koji to the fullest . This is possible only because Kojiya Sanzaemon is a koji starter manufacturer with over 600 years of history and the technology and knowledge it has cultivated through transactions with over 3,000 companies.
We have thousands of varieties of koji mold in our possession, each with its own unique characteristics, and we use them for different purposes. From among these, we carefully select those that will bring out the best in the color, aroma, and flavor of amazake. We use these koji mold to make rice koji, which is then handcrafted by our craftsmen into amazake.
It is a rich, mellow type that can be enjoyed fresh as is, as it is not pasteurized (heat sterilized) or diluted with water . It has a rich sweetness that makes it hard to believe it is non-alcoholic and sugar-free.
Because it is a rich type of drink, you can not only dilute it and drink it, but also mix it with your favorite beverage, use it as a sauce or syrup, or add it to desserts.

Amazake Junmai
It is characterized by the sweet aroma of koji and a rich sweetness that makes it hard to believe it is made only from rice and koji. To deliver the true deliciousness of rice koji, it is handmade using traditional methods, resulting in an amazake that allows you to feel the texture of the rice grains on your tongue. It is the most popular product in the series.
Sweet sake Hokkaido red beans
The sweet aroma of koji and the addition of red beans make this sweet sake taste similar to zenzai. Red beans and rice are known to go very well together in Japanese sweets, and each brings out the best in the other. The soft sweet aroma of koji and the warm taste of red beans create a moment of relaxation. It also goes great with soy milk and milk.
Sweet sake Naruto Kintoki
Made with Naruto Kintoki potatoes from Tokushima Prefecture. By adding diced Naruto Kintoki potatoes, the fluffy texture of sweet potatoes is combined with amazake. The gentle sweetness of the rice malt and sweet potatoes spreads in your mouth. You can enjoy the texture of the rice and sweet potatoes just like eating amazake.
Sweet sake Tosa yuzu
The sourness and slightly bitter taste of the yuzu harmonizes with the aroma and sweetness of the amazake, spreading throughout your mouth. It contains Tosa yuzu peel from Kochi Prefecture, which has been carefully selected for its aroma and flavor. The soft yuzu aroma, moderate acidity, texture of the peel, and clean, refreshing aftertaste will make for a relaxing moment.
Sweet sake First love lemon
"Hatsukoi Lemon" is a pesticide-free lemon from Kawai Orchard that can be eaten with the skin. This sweet sake has an exquisite balance of the rich sourness and sweetness of the juice and the bitterness of the skin. Taking advantage of the characteristics of Hatsukoi Lemon, the peel is added in addition to the juice, and the rice koji is strained, giving it a smooth texture.
Amazake Okinawan Salt (Summer only)
The salt from Okinawa's beautiful ocean is added to bring out the refreshing sweetness of Amazake. The smooth texture of the strained Amazake and the cool, chilled taste will seep into your body, making it the perfect accompaniment for the hot summer. It can also be used as a syrup for shaved ice or as an ingredient in ice cream.
