This is a koji starter made using a special bacteria that grows well on soybeans.

The spores are green so it is easy to see when they have taken root, and they multiply quickly so there is little chance of failure.
This seed koji is rich in protease, the enzyme that is ideal for soybean koji. The protease breaks down proteins, bringing out the full flavor of the beans.

Color of seed koji: Grayish white - Yanagi-nezu (Yanagi - nezu)

About preservation

Expiration date: Approximately 180 days. Store in a cool, dark place or in the refrigerator. After opening, use as soon as possible regardless of the expiration date.
